Wheatberry's Journey
Wheatberry Bakery began as a dream shared by Cassandra (Cassie) Bekas and her husband, Wojciech Bekas. With a first-class degree in Culinary Arts Management from the University of Ulster and invaluable experience as Head Pastry Chef at Open Bakery in Brighton, Cassie returned to her hometown of Glasgow ready to build something special.
Starting out in her parents’ garage with just four domestic ovens, Cassie and Wojciech put in the hard work, late nights, and a commitment that saw Wheatberry catch the attention of local businesses.
Within months, cafes and shops were eagerly stocking Wheatberry’s artisanal bread and pastries.
When the challenges of lockdown arrived, the couple pivoted, launching a subscription service that delivered freshly baked goods to the community. This innovative approach not only sustained the business but deepened their connection to customers who came to rely on their Sunday morning deliveries. As the world reopened, Wheatberry transitioned into wholesale, establishing itself as a trusted supplier to beloved establishments.

Cassie & Wojciech Take Immense Pride In The Wheatberry Team
Cassie and Wojciech take immense pride in their team, whose skills and dedication have been instrumental in the bakery’s success.
“We wouldn’t be where we are today without the passion and hard work of every person here,” Cassie says.

Today, Wheatberry Bakery is proud to employ a dedicated team of nine; consisting five talented bakers, a driver, an administrator, and Cassie and Wojciech at the helm. Every team member shares a commitment to quality and a love for the craft. From hand-laminating croissants to scoring sourdough loaves, their work is meticulous, ensuring that every product embodies the artistry Wheatberry is known for.

Craftsmanship
At Wheatberry Bakery, we believe in doing things the right way - by hand and with heart. Each croissant is laminated with butter, folded, and shaped by skilled hands, and every sourdough loaf is crafted using a 27-year-old mother starter. These time-honoured techniques give our products their distinctive flavour, texture, and artisanal charm.
Community
We’re deeply committed to fostering community and inclusivity. Our baking school, set to open in January 2025, embodies this spirit. It offers not only a chance to learn the craft but also a “pay what you can” initiative for those facing financial challenges, ensuring that everyone can experience the joy of baking.
